Can I put one birth control pill in a ziplock bag for later? I take my pill at work and I don’t want to risk my entire pack being ruined since I walk and it’s high 80s outside.

It’ll be very vulnerable to damage rolling around in a ziplock bag in a purse, I wouldn’t risk it. Just take it at a time that’s more convenient.

So what you’d want to do is gradually change the timing over a certain period of time while staying in your usage window

You can always take it earlier, so if you’re moving to an earlier time, just take it at that earlier time. If you’re moving it to a later time you need to gradually move your time while staying in your usage window. For example if the time you take it is 7am and you want to start taking it at 6 pm, you’d need to gradually move it to 6 pm in order to stay protected. •take it at 8 am •then at 9 am •and so on moving your time 1 - 2 hours later until you are at your new desired time.

I used to walk to school/work with my pill pack in my purse all the time in hot weather (lived in Florida) and it was never an issue. I don't think that your pill will be damaged by temperatures that are fine for you to withstand as a human.
