In my last pack, I skipped the placebo week and went straight into a new pack. At the end of this current pack, I decided to take the placebos. Am I protected right away or should I wait after the 7 days of taking the pill to be protected again?

you’re protected. the 7 days only applies when you first start birth control.

It wouldn’t make much sense to allow for break weeks if it would leave you unprotected x
